Many bakers discard a portion of their starter before every feeding. This helps maintain the sourdough's acidity levels and sour flavor. However, the discard process can be really wasteful. Here are some of my tips and tricks.
What is discard?
Sourdough discard is a portion of your dough that you removed from the jar before each feeding.
What can it be used for?
So many things! Consider some of these savory and sweet recipes-

How to store the discard?
Sourdough discard can be kept in an airtight container in the fridge for up to one week. If you are keeping it on the counter it will survive 1-2 days.
Can I feed my sourdough discard?
YES! If you want to make more starter- simply put your discard in another container and feed it at a 1:1:1 ratio.
